What field should I start a company in and grow slowly to something large?

Just wondering what kind of industries are going to grow and that I could start something and grow it into something greater.

Not necessarily an amazing revolutionary idea that no one has had before, but something that can have a lot of impact.

I was thinking of sensors to support this internet of things boom that'll occur.
