Validating an e-commerce idea with email sign-ups?

I'm reading a lot about validating ideas by using ads that lead to a landing page and an email sign-up. That makes sense to me but I'm not sure if that's a good tactic for an ecommerce site?

For example, I don't see how a bow-tie store with a landing page that basically says "coming soon sign-up now to be notified when we launch" would get many conversions at all.

Am I wrong here? Is there another way?
